CHERRY-APPLE CRUMBLE BARS
INGREDIENTS: 3 CUPS DRIED APPLES
3/4 CUP DRIED CHERRIES
3/4 CUP PLUS 2 TABLESPOONS OF PACKED LIGHT BROWN SUGAR
1 3/4 CUPS APPLE CIDAR
2 CUPS OF ROLLED OATS
1 TEASPOON OF GROUND CINNAMON
1 1/2 CUPS OF ALL PURPOSE FLOUR
1/2 TEASPOON OF SALT
1/2 TEASPOON BAKING SODA
2 STICKS OF COLD UNSALTED BUTTER. CUT IT INTO SMALL PIECES
A LITTLE EXTRA UNSALTED BUTTER FOR THE BAKING DISH
DIRECTIONS:
Preheat your oven to 375 degrees. Using the extra butter, butter the 9 x 13 inch baking dish. Put the apples, cherries and cidar into a saucepan and simmer for about 5 minutes, stirring occasionally. Drain the cooking liquid but keep some aside. Let it cool.
Chop the fruit coarsely and combine it with 2 tablespoons of sugar, 1/2 teaspoon of cinnamon and the reserved cooking liquid.
Whisk together the oats, flour, baking soda, salt and the remaining 3/4 cup of sugar, and 3/4 teaspoon of cinnamon in a large bowl. Cut in butter with a pastry blender until crumbs are formed about the size of a pea. Press 4 cups of the oat mixture into the bottom of the baking dish. Spread the fruit mixture on top, leaving a 1/4 inch border on all sides. Sprinkle the remaining oat mixture on the top of the fruit.
Bake until golden brown, usually takes around 35 minutes. Let it cool in the dish on a wire rack. Cut it into approx. 24 bars or if you want bigger bars just make them bigger and have less of the them.
